The Breakfast Mix

Good Morning Ravenous Friends!


So today we decided to use some leftover potatoes from last nights dinner. We used garlic roasted red potatoes, polish kielbasa, and red onions to make a Breakfast Mix.

Breakfast Mix

What you will need:
1/2  a red onion (diced to medium sized pieces)
1 package of polish kielbasa
1 1/2 cups of garlic roasted red potatoes
1/2 tsp garlic salt
1/2 tsp fresh cracked black pepper
3 pats of butter

Melt butter in large skillet, add kielbasa brown the edges, then add onions sweat them down till the become opaque, then add potatoes, season to taste, then turn heat down and cook an additional 7 minutes or so.



We also made butter fried eggs and honey drop biscuits. It all turned out beautifully and the family loved it.




Honey Drop Biscuits

What you will need:
2 cups all-purpose flour
1 tblsp baking powder
2 tsp white sugar
1/2 tsp cream of tartar
1/3 tsp salt
1/2 cup melted butter
1 cup milk
1/4 cup honey

Mix dry ingredients in separate bowl (except sugar) and set aside. In mixer add wet ingredients and sugar, mix till all ingredients are almost golden in color then gradually add dry ingredients, mix till sticky. Use ice cream scooper to evenly place on a cookie sheet covered in wax paper. Cook at 400 degrees for 11 minutes.

NYE Epiphany Lemon Loaf Pancakes

So being a baker I don't generally buy baked goods at the store mainly because well frankly I can do a better job and I prefer to know where my ingredients are coming from. So yes color me a little surprised that I bought the lemon loaf from F&E; It was in my defense a moment of weakness on NYE and I couldn't seem to help myself. (I'm a sucker for lemon)
Not surprising however, that of course it was dry and not very lemony. And why yes I am now yelling at myself asking "What was I thinking?" I then thought maybe this can be saved ( I'm thinking this at midnight as the fireworks and mystery booms are going off, I live in the city you just never know around here). Ok so now onto the Saving!



You will need:
5 slices day old lemon loaf (the dryer the better)
3 cups Bisquick
3 eggs
2 cups milk
1 med size lemon (zested & juiced)
Maple Syrup
Powdered Sugar


Put lemon loaf slices in food processors and mix till grainy. Then mix lemon loaf mix with bisquick and lemon zest. Then add milk and eggs finally mix in the fresh lemon juice. Cook on griddle till golden brown.

These are totally awesome lemon loaf pancakes! My son said they would also go well with Strawberry or Blueberry syrup.
